More mini-games and sidequests. Just a small thing, but adding these would add a lot to its replay value. This is part of the reason why FFVII and Xenogears were so epic, they had a lot more to them than just the game you played as an RPG, it went beyond that, and gave you things to do inside the game, and additions to the story that you could uncover by your own free will.
Inevitably, graphical improvements wold be made. I would have the graphical medium more consistant, perhaps use entirely in-game graphics a la Xenosaga (well, maybe an FMV for the intro). Grandia II, as it is, has bits of anime and FMV thrown in, sometimes with voice-acting, somtimes not which doesnt flow so well.
Also, a 3d world map would be useful too, from which you would be able to travel around by foot (or by other means of transport), thus enabling you to uncover secret areas and items on your own accord. This would be a massive change to the game, and so it could go wrong, but since i would be directing it, i wouldnt have it alter the rest of the game in any way, and would make sure it would work. In any case, a 3D world map to explore would open up a lot of oppurtunities for us to add in new things, like storyline tangeants and mini games.
That would be it really.
Do you know who holds the rights to the Grandia franchise thesedays? Is it Square Enix?
I recall Game Arts gradually being taken over by Enix, and then Square and Enix merged, which could have altered contracts and such. Who knows, the Grandia series may be lost among all these business proceedings.
